02. Slice onion ,strips of capsicum .
03. Blanched tomato ,cut into six pieces,deseeded
04. Crush garlic
05. Peel eggplant & cut them into roundles
06. Heat olive oil,in a pan , brown the egg plant, capsicum ,tomatoes, onion & finally courgettes
07. Add bouquet garni & seasoning .
08. cook over a low heat about 30min
09. Add 2tbsp of olive oil & cook
10. Remove the bouquet garni , serve hot.
